The immune system can respond to different foods you eat.  It is important to understand a food ALLERGY and food SENSATITIVITY.  They are two different ways the body’s immune system responds to food.    With an allergy your body responds with IgE mediated immune response, which is the more severe and potentially life-threatening reaction most people think of when they think “food reaction”.  This included anaphylaxis where it is difficult to breath, your heart rate and blood pressure can be affected. Sometimes is less severe like hives. In either case the reaction happens within minutes of consuming the food.

However you can have a food sensitivity where your immune system reacts to food but with a IgG mediated immune response. Unlike the allergy a sensitivity takes up 72 hours to show symptoms.  In the meantime you can have eaten several foods, so it gets harder to following the trail of bread crumbs…pun intended.

Histamine is involved in many inflammatory and allergic processes, including both immediate and delayed hypersensitivity reactions.
